Craving pizza in Jacó? Fiamma — "Pizza al Taglio, Roman Style" — is the wood-fired pizza spot at Jaco Walk, with a proper stone oven turning out thin, crispy Roman-style pizza by the slice or whole. The real draw: the dough is a sourdough (masa madre) with a 30-hour fermentation, baked artisan-style over wood and served in the signature rectangular Roman slices. It opened in May 2026, so it's one of the newer spots in the plaza — quick, affordable and genuinely good. As your local private chef, here's the quick guide.

Where it is & the wood-fired oven
Fiamma sits right in the Jaco Walk open-air shopping center in the heart of Jacó (Puntarenas), a quick walk from the other spots in the plaza. The centerpiece is the wood-fired stone oven — with its burning stacks of wood and a dramatic sculpted face over the arch — which is what gives the Roman-style pizza that blistered, crispy crust. It's a lively, open-air spot with live music and a DJ, so it's as much an evening hangout as a quick slice. Grab a slice to go or sit and have a whole pie.
